- 1 ripe banana
- 2 tablespoons refined coconut oil, melted
- 1 egg
- 1⁄2 tablespoon pure maple syrup
- 1 cup almond flour
- 1 teaspoon cinnamon
- 1⁄2 teaspoon baking powder
- 1⁄4 teaspoon baking soda
- 1⁄2 cup high-quality dark chocolate chips

- Brownie Layer
- 1 egg
- 3 tablespoons refined coconut oil, melted
- 1⁄3 cup date sugar
- 1⁄4 cup high-quality dark chocolate, melted
- 1 tablespoon cocoa powder
- 1 1⁄2 tablespoons arrowroot powder
- 1⁄4 cup walnuts, or nuts of your choice (chopped)
- Almond butter (optional)
Instructions
Preheat oven to 340 degrees F (170 C). Line a baking dish with parchment paper and lightly oil the parchment paper with coconut oil. Set aside.
For the Banana Bread Layer: In a large bowl or standing mixer, combine the banana, coconut oil, egg, and maple syrup. In a separate medium-sized bowl, mix together the flour, cinnamon, baking powder, baking soda, collagen powder, and chocolate.
Add the dry ingredients to the wet ingredients and mix well to combine. Pour the batter into the prepared baking dish and set aside.
For the Brownie Layer: In a clean medium-sized bowl, whisk together the egg, oil, coconut sugar, and chocolate. Add the cocoa powder, arrowroot powder, and walnuts. Gently pour and spread the brownie batter on top of the banana bread layer.
Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
Allow the banana bread brownies to cool before cutting into squares. Enjoy as is, or spread with almond butter.
