Our homemade date caramel with olive oil is the perfect, healthy alternative to traditional caramel – and completely free of refined sugar! With its velvety texture and fine, natural sweetness, it's wonderful as a spread, topping, or dip.
Ingredients
· 200g soft Medjool dates, pitted
· 4–5 tbsp warm water (depending on desired consistency)
· 2 tbsp mild extra virgin olive oil
· 1 tsp vanilla extract
· A good pinch of sea salt (preferably Fleur de Sel)
· Optional: 1 tbsp nut butter (e.g., cashew or almond – for extra creaminess)
· Optional: 1 tsp Colladerm or Maca
Preparation
1. Blend all ingredients in a high-speed blender or food processor until creamy.
2. Add water spoonful by spoonful as needed until a velvety caramel texture is achieved.
3. Taste and adjust – perhaps more salt for a "salted caramel" kick or more vanilla.
4. Store in a jar in the refrigerator (lasts about 1 week).
